I’m currently up in the air flying from Chicago to Dallas after an incredible weekend. If you follow me on Twitter, you’ve probably seen a lot of updates the past couple of days. I met so many inspiring people and made awesome new friends. It changed my perspective on blogging and I’m going to re-cap the presentations in more detail over the next few days. Yesterday was packed with tons of delicious food from great sponsors and informative presentations by awesome speakers/bloggers.
Lunch was sponsored by Oroweat and the buffet offered an abundance of veggie options and wonderful sandwich thins. I had a full plate of chickpea salad, quinoa and made a perfect veggie sandwich.


After lunch the presentations continued and I snacked on some Attune chocolate granola munch and raspberry dark chocolate probiotic wellness bar.

Once the presentations wrapped up, it was time for some rest + relaxation before heading out for dinner with these lovely ladies.

Heather (in the black top) and Rebecca (on the right), both Registered Dietitians, were the speakers for the “Fueling for Fitness” session yesterday morning. As a new runner and someone with a past of disordered eating, I learned so much from their presentation. (Again, detailed recap coming this week.) Also pictured, new friend, Jen on the left.
We toasted the great weekend with beer and wine and enjoyed some ridiculously yummy soft pretzels with spicy mustard dipping sauce.

I followed Rebecca’s lead adding salmon to a spinach salad with green apples, cranberries, walnuts and a lemon vinaigrette.

It was great to have a low-key dinner with these 3 women and talk about training, running, fueling, fitness, nutrition, boyfriends, husbands, traveling, etc.

), breakfast buffet sponsored by Thomas’ Bagel Thins (new favorite!), exploring Chicago on a gorgeous Sunday afternoon and a many more photos and reflection on the weekend.

oh! when I saw the photo of you + Nichole I actually said “awww…” out loud, which made Basil sit up and climb on me. Two of my FAVORITES right there!!
